QUICK VEGAN SMOOTHIE BOWL
I’m all about a fast and healthy meal! This recipe only calls for 3 ingredients plus your toppings. Talk about simple! The banana blueberry smoothie bowl is a perfect plant based breakfast or snack. Especially during the summer months and your kids will love it too!

Toss your frozen fruit and milk of choice into the blender. I used almond milk. Usually I would use soy for the added protein.
Blend on low speed until it is a thick mixture. The key is not mixing it to much, so it has a little thick creaminess to it.
Scoop your mixture into a bowl and add your toppings. I added some sliced strawberries and a sprinkle of granola and chia seeds. Wallah! You’ve got yourself a banana blueberry smoothie bowl. Enjoy!

1 cup frozen organic strawberries and blueberries
¼ cup almond milk
2 tablespoons granola
½ tablespoon chia seeds
3-4 sliced strawberries
1. Toss your frozen fruit into the blender. Pour your milk into the blender. Blend on low speed. The goal is to keep the mixture thick and creamy. You may need to stop in between blending to scrape the sides and get it all mixed up.
2. Once it’s all blended up. Use a spatula to scoop the fruit mixture out of the blender and into a bowl.
3. Top the blended fruit with the strawberries, granola, and chia seeds.
NOTE: *This mixture can be stored in the freezer for 1-2 weeks if needed.
