This blueberry chia seed pudding is amazing to say the least. This vegetarian recipe is vegan as well. This meal can be a quick breakfast or snack. This chia seed pudding is simple, delicious, and nutritious. Let’s get right to it!
Simple and delicious breakfast or snack!
- 2 cups almond milk any non dairy milk will do
- 1/2 cup chia seeds
- 1/2 tbsp vanilla extract
- 1/4 cup maple syrup
- 1/2 tsp cinnamon
- 1/2 cup blueberries
- 1 whole banana
- 1 tbsp vanilla granola
- 1 tbsp melted peanut butter
Blend all ingredients until smooth, except for the chia seeds, granola, and peanut butter.
Fold in the chia seeds
Pour ingredients into a mason jar and refrigerate for a minimum of 4 hours or overnight.
When read, pour a small amount of the chia seed pudding into the bottom of another mason jar.
Add a layer of blueberries and sliced bananas. Then add another layer of pudding.
Top with more blueberries and the remainder of the banana.
Sprinkle with granola and drizzle with peanut butter.
