Learn how to make this delicious whole wheat vegetarian Blueberry Muffin recipe. I’m always looking for ways to still have a healthy breakfast, but during the week it absolutely must be something that is quick. This meal is quick, easy, and healthy! You can meal prep with these muffins and make this vegan recipe on Sundays and have them for a quick healthy breakfast throughout the week.
This meal is something not only for you, but if you have children they love these muffins too. I love when I can make a meal knowing its healthy and the kids don’t even know the difference. One of the other great things about this recipe is that you can easily add variety to it. You can alternate which fruit you would like to use.
I already mentioned these muffins are a great way to start your day, but let me explain to you why I say that. You know blueberries are good for you, but do you really know why? Blueberries help lower your blood pressure, fight heart disease, helps to manage diabetes, improves your brain health, fights wrinkles, and helps with weightless and digestion. These are just a few of the great benefits of blueberries. Need I explain more!

- 2 tbsp brown sugar
- 1/2 tsp cinnamon
- 1 egg
- 1 cup organic all purpose flour
- 1 cup organic whole wheat flour
- 3 tsp baking powder
- 1/2 tsp sea salt
- 1/4 cup extra virgin olive oil
- 3/4 cup orignial unsweetened almond milk can substitute
- 1 cup blueberries can be frozen or fresh
- powder sugar optional
Heat your oven to 375 degrees. Spray muffin pan with non-stick spray
Combine brown sugar and cinnamon in a bowl. Sat it aside
Combine milk, oil, honey, and egg in a bowl. Whisk together.
Add flour, and salt. Whisk together.
Scoop mixture into the muffin pan. I used 1/3 cup per muffin.
Sprinkle each muffin with a little bit of the brown sugar and cinnamon mixture. Leave some for after the muffins are finished baking.
Bake at 375 degrees for 18-20 minutes.
Remove from the oven let cool. Sprinkle the remaining of the brown sugar and cinnamon on top. Enjoy!
