Healthy vegetarian recipes don’t have to be difficult. Vegetarian dishes can be simple and delicious. These vegetarian egg muffins are so good that my entire family kept asking for more! When the kids will eat your vegetarian meals you know it has to be good. Mornings can be hectic! I know in my house trying to get the kids up and out of bed is a major tasks in its own. You can make this meal on Sunday and have them to grab and go during the week. One less thing to be concerned about in the morning helps a lot
As a vegetarian at times you can get into a routine of eating the same thing for breakfast. For those mornings you don’t feel quite like having some oatmeal, a fruit smoothie, or a vegetable scramble. This meal is definitely a top contender. You can pop these in the microwave and in no time be out the door.
These vegetarian egg muffins are sure to supply you with what you need to get going for the day. Spinach has an extremely high nutritional value and is rich in antioxidants. It is a good source of vitamins A, B2, C and K, and also contains magnesium, folate ion, calcium, and potassium. The orange bell pepper is an excellent source of vitamin A, vitamin C, and vitamin B6. They are a good source of folate, vitamin E, dietary fiber, vitamin B2, and potassium. The onions assists in regulating blood sugar and so much more. This recipe includes shredded cheese, but you can make them without it or use vegan cheese if you’d like.
Let’s get started on our recipe! First things first you want to grease your muffin pan with a non-stick spray while heating your oven.
Sat that aside while you finish the rest. Next you will want to chop all of your vegetables you will be using.
Combine all your ingredients into a bowl and whisk.
Pour your mixture into the muffin cups and bake.
Remove from the oven and let them cool for about five minutes. Remove them from the muffin pan, and you can serve or store in a storage container for the week. For this recipe I love to add some picante sauce to dip the vegetarian egg muffin in.

Simple vegetarian breakfast
- 1 tbsp sea salt
- 1 tbsp black pepper
- 1/2 white onion chopped
- 1/2 cup shredded cheese optional
- 1 orange bell pepper chopped can use red bell pepper
- 7 eggs
- 1 cup fresh spinach chopped
Preheat the oven to 375 degrees. Spray your muffin pan with non-stick spray.
Combine all ingredients into a bowl. Whisk all ingredients together.
Pour egg mixture into muffin pan. About 1/3 cup per muffin cup.
Place the muffin pan into the oven and bake for about 18-20 minutes.
Remove the pan from the oven. Let cool, and serve. Enjoy!
